Last night we made black bean burgers. Which consisted of mashing up a can of black beans, fresh bread crumbs, an egg, and a diced fresh jalapeƱo pepper. After mixing well, and shaping them into patties, we dipped them in cornmeal and put them on a hot skillet with oil. Then we let them brown and crisp on each side.
We also made fried yellow plantains, too. While frying them I sprinkled some sugar on them. Served hot and dipped in sour cream...they're so good.
